A healthy and delicious breakfast or snack, these banana oat bars are easy to make and perfect for any occasion.

Ingredients

* 1 ½ cups mashed ripe bananas (about 3 medium)

* 2 large eggs

* ¼ cup unsweetened applesauce

* 1 teaspoon vanilla extract

* 2 cups rolled oats (old-fashioned oats)

* 1 cup all-purpose flour

* ½ cup packed light brown sugar

* 1 teaspoon baking powder

* ½ teaspoon ground cinnamon

* ¼ teaspoon salt

* ½ cup chopped walnuts or pecans (optional)

* ½ cup chocolate chips (optional)

* ½ cup dried cranberries or raisins (optional)

* ¼ cup sunflower seeds or pumpkin seeds (optional)

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.

2. Mash bananas in a large bowl. Add eggs, applesauce, and vanilla extract. Mix well.

3. In a separate bowl, combine oats, flour, brown sugar, baking powder, cinnamon, and salt. Whisk.

4. Gradually add dry ingredients to wet ingredients, mixing until just combined.

5. Fold in optional add-ins.

6. Pour batter into the prepared pan and spread evenly.

7. Bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

8. Let cool completely on a wire rack before cutting into bars.
