* 1 cup chopped cucumber
* 1/2 cup chopped bell pepper (any color)
* 1/2 cup cherry tomatoes, halved
* 1/4 cup chopped red onion
* 2 tablespoons chopped fresh herbs (parsley, dill, or cilantro)
* 1 cup cooked chickpeas (or grilled chicken breast, salmon, or tofu)
* 1/4 cup avocado, diced (or 2 tablespoons of your favorite nuts or seeds)
* 2 tablespoons olive oil
* 1 tablespoon lemon juice (or your favorite light vinaigrette)
1. Wash all produce thoroughly. Chop the cucumber, bell pepper, and red onion. Halve the cherry tomatoes. Chop fresh herbs if using. Cook protein if necessary (chicken, salmon, tofu). Dice avocado just before serving.
2. In a large bowl, combine leafy greens, cucumber, bell pepper, red onion, and cherry tomatoes. Add your chosen protein and sprinkle with fresh herbs. Toss gently.
